The Standard Grilled Chicken wing (or Naked Wing) that are simple to make and taste great.


The Chicken Wing is an American favorite. This recipe is very simple and is an alternative to classic buffalo wing which is typically deep-fried and served with either Ranch or Blue Cheese Dressing.

How Do we Make the Wings

Before We Start
We need to prepare a few things before we can start. For starters, we will be cooking the wings twice. The first cooking step will be in the oven. We need to bring the wings internal temperature to roughly 145F. Then we will finish them on the grill (or pit) to introduce that smoky flavor.

We use the American Barbecuing The House Hot Sauce and it should be prepared well in advance.

Let's Get Started
Preheat the oven to 425F (220C)



We first start with fresh chicken wings. The wings can be either whole or already separated. Because we will be baking the wings, either will do. It all comes down to personal preference. Wash the wings thoroughly and place them in a large bowl.



Add the oil and hot sauce to the wings and toss until evenly coated. In a separate bowl, combine your dry ingredients. Incorporate this mixture while tossing the wings.

Remove from bowl and place on the oven rack with plenty of spacing between the wings. Overcrowding will produce steam, which will make the skin soft, not crispy.

Place in oven about 40-45 minutes until browned nicely, or when the internal temperature reaches 145F. Be sure to turn the wings 20 minutes into the bake.



In the meantime, we will need to start our fire. You can use either a charcoal grill or a fire pit with hardwood of your choosing. In a pinch, a propane grill (gas grill) will do.

Pull the wings from the oven and brush with a little melted butter.

It is important to do this part quickly because if the wings cool too much, the cooking process will stall. A stalled cooking process requires more time to reach the proper internal cooking temperature of 165F, and you will risk burning the wings.

Ideally, we want to grill over direct heat for 10-15 minutes turning often to prevent burning.



Place on a large plate with your favorite side sauces.

We will bake our wings first in a preheated oven at 425F (220C). Then finishing on a grill or pit.

Ingredients

The Protein

  • Roughly 1 lbs or 500g Chicken Wings (Flats and Drums)

Additional

  • 2 tbsp (30ml) Oil
  • 2 tbsp (30ml) Butter
  • 1 tsp (3g) Garlic Powder
  • 1 tsp (3g) Paprika
  • ½ tsp (3g) Black Pepper
  • ½ tsp (3g) Salt

The Sauce


Instrucions

  1. Preheat oven to 425F (220C).
  2. Prep a baking sheet with parchment paper and place an oven rack on top.
  3. Place the chicken wings into a large bowl, add oil, hot sauce and toss to coat.
  4. In a small bowl combine the garlic powder, paprika, salt, and black pepper.
  5. Add the mixture over the chicken wings and toss to coat evenly.
  6. Arrange the seasoned chicken wings on the rack in one layer.
  7. Place on baking rack and bake for 40-45 minutes (until browned), flipping once after the first 20 minutes.
  8. While wings are baking prep your grill or pit and start your fire.
  9. Remove the wings form the oven and brush with melted butter.
  10. Now grill over open flame for 10-15 minutes until glazed and finished.

Notes: Serve with any number of sauces (BBQ sauce, Hot Sauce, Blue Cheese Dressing, Ranch Dressing, Garlic Parmesan Sauce, etc.)
