Sweat & Spicy Grilled BBQ Chicken wings that pair perfectly with your favorite German Beer.
Introduction
The Chicken Wing is an American favorite. This recipe came as an alternative to classic buffalo wing which is typically deep-fried and served with either Ranch or Blue Cheese Dressing.
If you have ever attended a Superbowl Party, you will know of the classic Buffalo Wing. They are so popular that during the 2019 Superbowl,1.38 billion chicken wings will be consumed (cited from National Chicken Council). To bring this number into context, it is roughly 4 wings, per person, for the entire population of the United States.
Now we could make this classic chicken wing, however being deep-fried in oil presents itself to be a bit on the greasy side. And I enjoy the flavor profile of a grilled wing as it is much different than the classic wing.
How Do we Make the Wings
Before We Start
We need to prepare a few things before we can start. For starters, we will be cooking the wings twice. The first cooking step will be in the oven. We need to bring the wings internal temperature to roughly 145F. Then we will finish them on the grill (or pit) to introduce that smoky flavor.
We use 2 different sauces in this wing recipe. These sauces should be prepared well in advance. The sauces we need are the American Barbecuing The House Hot Sauce and the Kansas City BBQ Sauce
Let's Get Started
Preheat the oven to 425F (220C)
We first start with fresh chicken wings. The wings can be either whole or already separated. Because we will be baking the wings, either will do. It all comes down to personal preference. Wash the wings thoroughly and place them in a large bowl.
Add the oil and hot sauce to the wings and toss until evenly coated. In a separate bowl, combine your dry ingredients. Incorporate this mixture while tossing the wings.
Remove from bowl and place on the oven rack with plenty of spacing between the wings. Overcrowding will produce steam, which will make the skin soft, not crispy.
Place in oven about 40-45 minutes until browned nicely, or when the internal temperature reaches 145F. Be sure to turn the wings 20 minutes into the bake.
In the meantime, we will need to start our fire. You can use either a charcoal grill or a fire pit with hardwood of your choosing. In a pinch, a propane grill (gas grill) will do.
Pull the wings from the oven and brush with BBQ sauce. Coat the wings generously on both sides.
It is important to do this part quickly because if the wings cool too much, the cooking process will stall. A stalled cooking process requires more time to reach the proper internal cooking temperature of 165F, and you will risk burning the wings.
Ideally, we want to grill over direct heat for 10-15 minutes turning often to prevent burning.
Place on a large plate with your favorite side sauces and go to town!
